16 cl White rum
8 cl Lime juice
32 cl Soda water
4 tbsp Cane sugar
40 Mint leaves
Ice
10 Mint leaves -
1 tbsp Cane sugar
Add Mint leaves and Cane sugar to the Highball glass and muddle gently.
The goal is not to crush the leaves to pieces, but only to bruise them slightly to release their flavor.

2 cl Lime juice -
4 cl White rum
Pour Lime juice and White rum into the glass, then stir gently to help dissolve the sugar.
Spoon
8 cl Soda water -
Ice
Top with Soda water, then add your preferred amount of ice. Stir gently in a circular motion to combine.
Use your spoon to gently drag some of the muddled mint higher up into the glass — this distributes the flavor beautifully.
