12 cl Lemon juice
8 cl Simple syrup
20 cl Soda water
8 cl Egg white

6 cl Gin -
3 cl Lemon juice -
2 cl Simple syrup -
2 cl Egg white
Add Gin, Lemon juice, Simple syrup, and Egg white to an empty shaker and shake vigorously to foam the egg white.
This is easier to achieve without ice.

Ice
Add ice to the shaker and shake again until the mixture is well chilled.

Strain the mixture into the glass, leaving the ice behind.

5 cl Soda water
Top with Soda water.
Pour gently — we want to preserve as much carbonation as possible.

Lemon wheel
Garnish with a Lemon wheel.
